Why is the tie-in the usual suspect on an older pool?
Because it is the youngest joint on the oldest system, and it was made to connect two things that were never designed to meet. When a pad is rebuilt, new pipe and valves are joined to buried lines that may be decades old, and the transition carries the movement, the pressure and the material difference of both sides.
So the pad is where a locate here starts. Valves, unions, the connections either side of the pump and filter, and the first stretch of buried line beyond them all get examined before anybody puts a microphone on a suction line halfway across the yard.
What else fails on a pool that has been in the ground this long?
The penetrations, which have had decades to work against the shell. The skimmer throat is the usual finding, followed by return fittings, the main drain and the light niche conduit; a replastered pool can also lose water where new plaster meets an old fitting, which looks sound and is not.
Each of those is checked with the water still and the equipment off, using dye at close range. None of it requires draining the pool, which matters on an older shell where emptying carries its own risks.
How do you measure the loss when the house is empty for months?
With the meter as well as the water line, so there is a record either way. Note the meter reading with the house shut off, write it down with the date, and have somebody read it again while you are away; an auto-fill will otherwise keep the pool looking perfect while it quietly replaces whatever is escaping.

Does replastering fix a leak?
Not reliably, because most losses on older pools are at penetrations and plumbing rather than through the plaster. A resurfaced pool can still lose water where new plaster meets an old fitting. Measure the loss and locate it first; resurfacing is a separate decision about condition.
We are away for months at a time. How would we even know?
From the meter, because the pool itself will not tell you. An auto-fill replaces what escapes, so the water line stays put. A dated meter reading taken with the house shut off, and another taken by whoever checks the property, is the only thing that catches this early.
